Bub’s Bakery Rethinks Allergen-free Baking Courtesy of Melissa Weller and Jenn Saesue

What began as restaurateur Jenn Saesue’s journey to find a suitable birthday cake for her husband has now turned into a first-of-its-kind new venture in New York. Opening September 25th, Bub’s Bakery is a new concept that offers pastries, sweets and savory items free of all major allergens.   “We saw a clear gap in the market to create something that didn’t exist: a bakery that creates a seat at the table for those with dietary restrictions while offering pastries everyone wants to enjoy,” Saesue says.  The New Jersey born, Bangkok-raised restaurateur is the cofounder of 55 Hospitality, which operates Thai restaurants Fish Cheeks and Bangkok Supper Club. She was inspired to start Bub’s, named for her husband’s nickname, after finding that bakeries were either gluten-free or dairy-free or nut-free, but never all at once.  Bub’s Bakery interior.
